Would you like a healthy, high vibin' mid afternoon / mid morning / anytime pick me up treat. This might just be what you're after! 

Cacao Rocky Road

BASE

1/4 cup - Coconut Oil
1/4 cup - Cacao Butter
1/2 cup - Nut Butter (of your choice)
1/3 cup - Liquid Sweetener
1/2 cup - Cacao (we use Mamamuti Cacao of course)
Pinch of salt

MIX

1/2 cup chopped almonds
1/2 cup coconut
1/2 cup freeze dried berries (we used @viberi_organic blackcurrants)
1/2 cup rices

*That's what i added mostly based on what was handy in the pantry but you can get creative here, any kind of nuts, seeds, dried fruit would work well!*

METHOD

Melt the cacao but oil and butter together over a low heat. Add the rest of the base ingredients, stir to combine and remove from heat. Stir together the mix and base ingredients and place in either silicone mini muffin moulds for small bite sized treats or alternatively in a parchment lined baking tray and chill till firm. Enjoy!

Vegetable and Cheddar Loaf
INGREDIENTS

1 onion
1 carrot 
1 courgette
1 cup of cheddar cheese
1/2 tsp of salt
1/4 cup olive oil
5 free-range eggs
1 cup almond meal
Pumpkin seeds to sprinkle on top.

METHOD

Preheat oven. 
Finely dice the onion. Grate the carrot and courgette, use a paper towel or tea towel to squeeze out excess juice from carrot and courgette. 
In a large bowl add the onion, courgette, carrot, cheese, salt and oil and mix well. 
Beat the eggs, then add the almond meal and pour over the vegetable mix.
Mix well and pour mixture into a loaf tin. Top with seeds (and a little extra cheese if you like) 
Bake at 180 for 30 mins or until cooked.
